Cranberry Bread

I love this simple, easy, and colorful bread for the holidays. Actually, I like it anytime! Sometimes I use this recipe to make cranberry muffins, too.

2 cups flour
1 cup sugar
1 tsp salt
1/2 tsp baking soda
1/4 cup butter

Mix the dry ingredients. Cut in butter. Then add:
1 egg, beaten
1 tsp grated orange rind
3/4 cup orange juice

Stir evenly until moist. Fold in:
1 1/2 cups raisins
1 1/2 cups fresh or frozen cranberries, chopped
1/2 cup nuts (optional)

Spoon into greased loaf pan and bake at 350 degrees for 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean. Turn out of pan onto a rack to cool.
