Comfort Food


For some , it's beans and cornbread, or macaroni and cheese, cheesecake or steaks and potatoes.
But in the summer, there is no comfort like tomato comfort. Fresh tomato comfort. Vine-ripe, straight from the garden, juicy tomatoes is what I'm talkin' about. Yellow will do, the pink and yellow striped are fine.


But for tomato sandwiches, you just can't beat the big pink tomatoes. German pinks, pink Oxheart, Big Pinks---any of them will do. Some folks say they can't tell the difference, some say the pinks are not as tasty as the reds. It's an individual taste certainly. When fully ripe the pinks don't seem to be as acidic as other tomatoes, and they get really, really big. Many of the pink varieties are susceptible to blight, which adds to the challenge.
This year our German Pinks have been stupendous. They've produced well and long, and even though the blight has finally hit and the crop is dwindling, I have had my fix and I can hold out for another year...I think.
My lunch these days: tomato sandwich. Sliced ripe tomato of any variety on good bread with real butter, salt and pepper. Nothing more is needed. I could quite honestly eat tomato sandwiches year-round and be happy. Larry (yeah, my hubby packs my lunch, ain't I the lucky one!) usually gives me a baggie of cucumber slices and a yogurt, some fruit--I think I'm eating like a queen.
I'm off to bed now. The coyotes are howling up on the ridge, the moon is full, and the midnight hour is nigh.
But tomorrow? Tomorrow there will be more tomatoes to brighten my day. Ah, the gifts of summer!

  1. Such a sweet husband to pack your lunch. I've packed Charley's lunch for 31 years. I love tomato sandwiches, too, only I like Miracle Whip on mine (no butter). Sliced cucumbers are good on them also, with a little salt and pepper. Enjoy your lunch today, Susanne.

  2. I'm with Janet on the Miracle Whip! I could also eat tomato sandwiches year round. I find myself lately throwing tomatoes in everything and loving it. The Pinks are my dad's favorites because of the low acid. I try to buy him some everytime I find them. I've had little luck growing them myself. I think it's sweet that your sweetie packs your lunch.

  4. Yall, what is up with the Miracle Whip? :-) I don't care for it, really, on anything. Since we've tried to cut calories, mayo and Miracle Whip were first on the "out" list. My grandchildren are appalled that there is none in my fridge!

    I do like cucumbers on my sandwiches, Janet, or even just plain cucumber sandwiches with butter and s&p. That's my English mother's influence, I'm sure.

    Larry really helps me out in the mornings, and I appreciate it. Going to work is a lot easier when someone's taking care of details like lunch and coffee. I'm spoiled.

  5. I'm a fan of splurging and putting cream cheese on my tomato sandwich. (If only our tomatoes were producing this year--oh well, maybe next season)

    My Granny loves tomato sandwiches too! She does eat them year round thanks to Gritts. She says that she has to have her tomato sandwich every morning. I'm not sure if she puts butter on it or not.

  7. UMMMMM. YUMMMMMM!!!!!!!! tomato sandwiches are my favorite too - but I slather mayonaise on - Hellman's REAL Mayonaise - which must have my Granny rolling in her grave - she favored Duke's mayo. Whenever I taste the Duke's I think of her.
