Busy day yesterday, packing ebay sales, finishing up the Christmas cards finally, and getting the china cabinet into the booth. But before all that, I made this goodness for breakfast:
This is so simple. Beat the eggs with a little milk, salt and pepper and Italian herbs. Spray a cookie sheet with oil, cover with parchment paper and spray the paper. Pour the egg mix into the pan, add veggies of your choice (I used diced ham, cherry tomatoes and spinach), add grated cheese and bake at 375°f for 15 minutes. Voila!
Our hens are laying well so we have plenty of eggs these days.
That china cabinet. If it looks familiar, well yes. I have painted two others very similar to this one lately. One sold so this took its place.
We will be heading out for breakfast in just a few minutes. I shall have a skillet, like I always do.

ReplyDeleteEverything looks enticing as usual. I didn't know there is so much variation in depression glass design - something for every taste, I suppose ! I've borrowed a truck today and have quite a list of errands. But not expecting to pick up anything more exciting than pallets, if I see any.

ReplyDeleteYour breakfast thing is what we call a fritata here. I make mine in a cast iron skillet and love it because it is a one dish meal. Our Christmas breakfast is always a strata, if you've ever heard of them: tear up bread, add sausage, onions, peppers, mushrooms, pour egg mixture over top and let sit over night. Christmas morning, get up, and pull your strata out of the fridge and bake it in the oven. Easy peasy and good too.
